Mini Wine Donuts

Since October is the time of the grape harvest, the recipe for this month is the delicious wine donuts, and flaky cookies typical of the Lazio region.

Ingredients for 50/60 mini donuts:

1/8 cup of red wine
1/8 cup of olive oil
1 cup sugar
Flour 00 grade
5/6 normal spoons of caster sugar

Preheat the oven to 350F.
In a bowl or mixer, pour the wine, oil, and sugar. Mix well and slowly add the flour. Continue to mix until the dough reaches a good working consistency, not sticky. More or less 1.2 pounds of flour. Put the dough on a flat surface and continue to knead it a bit. Divide it into many pieces and roll them out. Cut the dough in little donut shapes. Put a baking sheet on a baking pan. Put the caster sugar in a little plate and dip every donut in it only on one side. Place the donuts on the pan with the sugar side facing up. Bake in the over for 20/25 minutes. Let cool to allow the donuts to harden a bit. Keep in an air-tight container.

Ciambelline al Vino
Visto che ottobre è il periodo della vendemmia, la ricetta di questo mese sono le deliziose ciambelline al vino, biscotti friabilissimi tipici del Lazio.

Ingredienti per 50/60 ciambelline:

200 ml di vino rosso
200 ml di olio d’oliva
230 ml di zucchero
Farina 005/6
cucchiaio di zucchero semolato

Preriscaldare il forno a 180 gradiIn una ciotola o nella planetaria, versare vino, olio e zucchero. Mescolare bene e aggiungere la farina piano piano amalgamandola. Continuare a mescolare fino a quando l’impasto non avrà raggiunto una consistenza facile da lavorare e non appiccicosa. Più o meno 580 g di farina.Mettere l’impasto sul piano da lavoro e lavorarlo con le mani infarinate. Dividerlo in tanti pianetti e stenderli. Tagliare a forma di ciambelline.Mettere la carta da forno su una teglia. In un piatto, versare lo zucchero semolato e passarci ogni ciambellina solo da un lato prima di metterla sulla teglia con il lato zuccherato verso l’alto.Cuocere in forno preriscaldato per 20/25 minuti. Lasciare raffreddare per farle indurire un po’. Conservare in un barattolo ben sigillato.
