September is the month that marks the transition from the summer heat to the autumn breeze, and so we like to rediscover more satisfying dishes and flavors, thanks to seasonal fruits and vegetables. The stars of the table are grapes, pomegranates, figs, pears, mushrooms, and walnuts… not only to prepare tasty recipes but also jams and preserves to taste during the cold winter months. Among the best autumnal jams, one of the sweetest and most delicate is certainly that of figs, (which grow from mid-July to the end of September), perfect as a filling for cakes and pies, to spread on bread for breakfast, or to pair with different cheeses.
Ingredients for 2 jars:
2 lb figs
14 oz. sugar
1 lemon
Carefully wash and peel the figs, cut them into wedges, and place them in a bowl with the lemon juice and the grated zest and let them flavor for about 1 hour. Then, put everything into a pan, add the sugar, and cook over low heat for about 40 minutes, stirring and skimming, from time to time, with a slotted spoon. To be sure that the jam is well cooked, test its consistency by putting a teaspoon of jam on a plate: if it solidifies, then it is ready! Sterilize the glass jars – which will be used as containers – with boiling hot water, and with the help of a ladle, fill them with the jam up to 0.4 inches from the edge. Close the jars tightly and turn them upside down to vacuum seal them and prevent mold. Once the jam has cooled down, flip the jar again and store it in a cool place until consuming (no more than 2 years!).
Bonus tip: fig jam is particularly good with flavorful and medium-aged cheeses, such as parmesan, brie, camembert, or fresh and semi-seasoned pecorino.
Settembre è il mese che segna il passaggio dal caldo estivo al tepore autunnale, e anche a tavola si riscoprono pietanze e sapori più appaganti, grazie a frutta e verdura di stagione.I protagonisti della tavola sono l’uva, il melograno, fichi, pere, funghi e noci… non solo per preparare gustose ricette, ma anche marmellate e conserve da consumare nei freddi mesi invernali. Tra le migliori marmellate autunnali, una delle più dolci e delicate è sicuramente quella di fichi, (che crescono da metà luglio fino alla fine di settembre) perfetta come farcitura per torte e crostate, da spalmare sul pane a colazione o da accompagnare ai formaggi.
Ingredienti per 2 vasetti:
1kg di fichi
400 g di zucchero
1 limone
Lavate bene e sbucciate i fichi, poi divideteli a spicchi e metteteli in una ciotola ad insaporire con il succo di limone e la buccia grattugiata per circa 1 ora. Successivamente trasferite il tutto in una pentola, aggiungete lo zucchero e fate cuocere a fuoco basso per circa 40 minuti, mescolando e schiumando, di tanto in tanto, con una schiumarola. Per essere sicuri che la marmellata sia cotta a puntino, provate a testarne la consistenza mettendone un cucchiaino su di un piatto: se la marmellata si solidifica, allora è pronta! Dopo aver sterilizzato i vasetti di vetro – che verranno usati come recipienti – con acqua bollente, e con l’aiuto di un mestolo, metteteci la marmellata ancora calda, riempiendoli fino ad 1 cm dal bordo. Chiudete i vasetti ermeticamente e capovolgeteli così che si crei il sottovuoto e non si formi la muffa. Una volta raffreddato, girate nuovamente il vasetto che potrà essere conservato fino al momento di consumare la marmellata (non oltre 2 anni dalla preparazione!).
Bonus tip: la marmellata di fichi si accompagna particolarmente bene con formaggi importanti, saporiti e di media stagionatura, quali parmigiano, brie, camembert o il pecorino fresco e semi stagionato.
